Three Flavours Egg Spring Roll (三味怪蛋卷/三味怪蛋卷)

Snacking in Fengqihu (奮起湖/奋起湖).

 

One of the stalls was selling a specially treated egg, that has characters from 3 different types of eggs: the egg yolk of a salted duck egg, the egg white of a century egg and the outer crust of an egg braised with tea leaves.

 

The egg is served inside a fresh spring roll with grated peanut candy and chopped cilantro leaves.

 

You would think it would taste terrible - but it actually tasted surprisingly well. All the elements worked: The slightly saltiness and elasticity of the wheat spring roll skin, the crunchiness and sweetness of the grated peanut candy, the freshness and greenness of the chopped cilantro and the differing textures and sulphurous egginess of the egg all combined to a most intriguing taste in the mouth.
