Aiyu (Fig) Jelly (爱玉)
Aiyu jelly is actually the pectin of a type of fig, indigenous to Taiwan {Ficus pumila var. awkeotsang}, first identified by a Japanese botanist. In Alishan, one can find shops selling packets of these fig seeds. One need only add warm water to them and agitate the seeds by continuously rubbing them to extract the pectin. The pectin is very stable and eventually will gelantinise.
The bland tasting gelantinous jelly is then usually served cold with some sugar syrup and a squirt of lemon juice for taste.
