Minced Pork Dry Noodles (肉挫乾麵/肉挫干面)

I finally hit pay dirt! Dry minced pork noodles!!! (Back home, Bak Chor Mee - Teochew style Minced Pork Noodles is one of my favourite dish) Dry minced pork noodles is actually a specialty from the South of Taiwan and so to be able to have it here in the middle of the mountains, is a luxury.
It is very fragrant, slathered thick with fried shallots oil. The minced pork is moist and mildly spicy. The serving is small and I kinda regretted deciding to share one bowl with my mate but I supposed when you only have that many mouthfuls to have, one appreciates each mouthful even more!
Just lovely, even though it was from just a simple stall, selling simple food to hungry people.
