All the restaurants and eateries are cluttered around the centre of town, and that is where all the tour groups go for their meals. From experience, these spots are no good for hearty meals.
My mate and myself wandered off to the edge of town where there was another cluster of eateries and eventually, decided upon one (at the time, quite empty) eatery [山賓餐廳] that brand their food as being healthier with no added MSG, low in salt and low in oil. Personally, I do not give a rat's ass about MSG, but I certainly like to go for meals that are lower in both salt and oil. I am not a sodium chloride junky.
The Hakkas form a big Chinese dialect group in Taiwan. They were formally nomads from the north which migrated south in China when the north descended into chaos with war. Some eventually crossed the Strait and came to Taiwan.
This is a famous dish from the dialect group: Pork belly slices work stir-fried with dried bean curd, cuttlefish ribbons, chopped spring onions and red chillies.
Very fragrant despite the simplicity. This is a dish with its roots in earthen rusticity. The oily gravy packed a lot of aroma and taste. All you need next are just fresh ingredients to say their own words.
