Before one scratches the head and wonder what the hell is so special about an egg, this is no ordinary braised tea leaf egg, which is found commonly across Taiwan, but the version from the very famous '日月潭玄光寺金盆阿嬤古早味香菇茶葉蛋'.
Braised Tea Leaf Egg usually involves using Chinese Tea Leaf, Soysauce and spices but here, the secret ingredient is the addition of Shiitake Mushroom. With the addition of the fungi, the flavour is greatly enhanced and the egg took on, not only that 'Q' texture that the locals love, but a round sulphurous earthy note that distinguishes it from the norms.
