The shop/stall is right next to a suspension bridge and I thought it was named after the bridge. "No, no" said the beautiful lady assistant. It turns out the pastry was born out of the war between the indigenous aborigines and the invading Japanese. As food is scarce during war time, the aborigines resorted to local ingredients such as millet to create war time food supply that allows them to reserve energy to fight the invaders. (They eventually lost)
Post war, the millet biscuits have become popular and the owner of this shop, improved the formula to create his own version, where millet flour Mochi is used as the filling, creating an intriguing justaposition of textures between a crumbly exterior and a chewy, elastic interior. Depending on the season, the flavour of the Mochi alternates between Matcha green tea and Plum blossoms.
It tasted really good.
