Stir-Fried Wild Boar (炒山豬肉/炒山猪肉)
Dinner @ one of the eateries in Lushan [廬山], after a lovely simmer in the local hot springs.
We had wild deer for lunch and so when my mate and myself saw wild boar (which the indigenous aborigines can hunt and then sell the meat) on the menu, we went for it.
It's the usual simple stir-fry with garlic, onions and spring onions. Wild boar is almost similar to pork, except that it is not as tender and a tad more animalic.
Singaporeans have not had real wild boar for almost a decade now due to the ban on importing pork from Malaysia since the Nipah virus outbreak of 1999. I used to remember my dad buying back packets of wild boar as supper from the hawker centre - slices of braised wild boar heavily garnished with plenty of aromatic cilantro - chewy skin and tender flesh and all, and consumed dunked into a spicy fiery acidic chilli dip.
Those were the days!
