Three-Cups Native Chicken (三杯土雞/三杯土鸡)

Dinner @ one of the eateries in Lushan [廬山], after a lovely simmer in the local hot springs.

 

I LOVE 'Three Cups' style cooking. It is very typically Taiwanese. The cooking calls for equal cups of sesame oil, soysauce and Chinese cooking wine in the recipe. Joint by fresh spicy basil, garlic and spring onions, the aroma is seductive with a most complex allure but yet the taste it delivers is simple but additive.

 

Here, we went local again and opted for native chicken, or free range chicken. The meat is not as plump and tender as the chicken one might find in the supermarket, fattened through controlled diets but most delicious nonetheless.
