Stir-Fried Chayote Shoots aka Dragon's Beard (炒龍鬚菜/龙须菜)
Dinner @ one of the eateries in Lushan [廬山], after a lovely simmer in the local hot springs.
Dragon's Beard kept appearing on the menus. I have never heard of it. The locals are pretty fond of it and spoke highly of it as an indigenous dish.
Has a slight musty green taste when cooked but despite the intense green colour, it can be pretty tender and soft after cooking. I later learnt, it was in fact, the young shoots of the chayote plant, which kinda robbed it of its mystique......
