Chilli Soysauce Dip
Dinner @ one of the eateries in Lushan [廬山], after a lovely simmer in the local hot springs.
This is the standard 'chilli sauce' I get whenever I ask for one....and that is plenty often. An interesting combo - chopped red chillies, chilli oil, sesame oil and soysauce.
A light very fragrant spicy mix to lift up any dish. My guess is that since Taiwanese cooking tends to lean on the lighter side, a strong mix of chilli, like those found in Southeast Asia, would have robbed the taste of any dish.
