Braised Gluten With Shiitake Mushroom (焖香菇素肉)

A closer look at individual dishes offered for dinner by the Hotel-Resort that I am staying with in Cingjing [清境].

 

Gluten is popular in the Far East as a god substitute for real meat due to its tender but firm texture and its ability to absorb the sauces and gravies that it is cooked in.

 

Shiitake mushrooms is also popular as both flavourant and umami giver. Their robust earthiness is a great delight in any braised or stewed dishes.

 

Put the 2 together and you get a lovely combination.
