Stir-Fried Mola Mola Fish (炒翻车鱼)

I never know one can eat the Sunfish. Then again, we Chinese.....
Usually stir-fried with vegetables, spring onion and ginger, the texture of both flesh and skin is rather unique. Rather tasting like what fish would usually be like, the flesh has the texture of both chicken thigh and bull frog thigh, while at the same time, the skin has this bubble-gum like and jelly-like springiness to it that is most perplexing.
It's not awful really.
I confess I have never tasted anything quite like it!
