Pork Ribs Noodles (排骨麵/排骨面)

Pork Ribs Noodles is not unique to Hualian. It is actually found throughout Taiwan. This dish happens to be from a famous shop in the city - '來成排骨麵'.

 

I had the dry version - even though the shop is actually air-conned, the oppressive summer heat still invaded the interior with each closing and opening of the sliding door. I wasn't keen to melt any further than I already was.

 

The dish was surprisingly light. The ribs were well marinated and to their credit, not overly fried to the point of being oily. Unfortunately, aside from a healthy dose of fried shallots, the taste was a tad too bland to excite my palette on a day where the world is shimmering outside. It screamed for something spicy, something more robust to wake the senses. The chilli sauce provided wasn't a good match as its salty fermented notes lend itself to be better used as a condiment rather than something that could be perhaps used as part of a sauce to blend and flavour the noodles.

 

I left feeling unfulfilled.
