Braised Wheat Gluten (滷麵筋/卤面筋)

Dinner @ '桃源街正宗山東牛肉麵'.

 

The second of the cold dishes me and my mate picked.

 

I like the tenderness of a well braised/prepared wheat gluten. The blandness of the starch simply allows it to absorb every flavour of the marinate used.

 

When well prepared, by themselves, they became morsels of delicacies on their own.
