Fried Fresh Milk (炸鲜奶)
"Fried Fresh Milk"? What the hell is that? How do one fried fresh milk?
Well, I eventually found my answers when the stall owner took out a large Tupperware from the fridge, where it revealed nicely cut up chunks of 'fresh milk', which I suspected to be custard made from fresh milk. She then dipped 3 of the chunks in light batter, poke a stick through and threw it in a deep fryer for several minutes.
About 5 minutes later, my mate is standing gleefully in front of the Shilin Market Stall, with our first encounter with "Fried Fresh Milk".
Was it any good? The batter was surprisingly and fluffingly light! (Reminded me of the batter chefs used to fry prawns with) The lightness helps to allow the taste of the milk to come through a tad from the oil. There is this gooey hot mess in the centre which kinda taste like condensed milk but not as intensed. For NT$20 a stick from the Shilin Night Market [士林夜市], I am not complaining.
