Oyster & Intestine Wheat Vermicelli (蚵仔大肠麵線/蚵仔大肠面线)
This was one of the most mentioned dish on Taiwanese food shows and soap series. Everyone seems intent on slurping up a bowl, regardless of any situation...like the Brits with their afternoon tea.
It's essentially chopped pig intestines stewed in soy sauce, then cooked with angel hair thin wheat vermicelli (not rice vermicelli) until everything softens down into a gooey mess in a big pot. A big scoop out of the pot into a bowl, popped on some fresh oysters with lots of chopped cilantro and a bowl of Taiwanese "afternoon tea' is served.
I had my first taste of this quintessential Taiwanese dish in the famous Shilin Night Market [士林夜市] (The stall is called '阿亮麵線'). There are bigger names in Taipei known for this dish (e.g '阿宗麵線' over in Ximending [西門町/西门町]). I never returned to it. No, not because I dislike it. Come on, everything has been disintegrated down to mere molecules and what weren't, were fresh ingredients - it's a very tasty enriching treat....but with Taipei sweltering at 34C-35C during my visit, a hot bowl of steaming wheat vermicelli broth wasn't what I was dying to have!
