Cold Noodles With Chilli Oil [关中凉皮]

This is the cold version of the dish. Cold rice noodles are served with cucumber juliennes, shredded chicken pieces, mung bean noodles and a healthy dose of chilli oil. Think salad.

 

Very refreshing and the chilli oil was tasty!
