Meat Steamed In Buckwheat Flour [粉蒸肉]

Another snack/meal found in Xi An, where meat (in this case, mutton) is steamed in buckwheat flour to create an extremely filling dish.

 

The overall taste is savoury, meaty, gritty (fibres!!) and starchy, interspaced with bits of chewy meat and tender fat.
