Stir-Fry Mung Bean Noodles [炒凉粉]

Mung Bean Noodles is a popular form of noodles, not made from traditional wheat or rice. Usually green bean (or mung bean) powder is used, although starch from other sources could also be used (for e.g. potato, sweet potato, green peas etc).

 

The texture is almost carageenan like and it has a 'cooling' sensation as if one is eating jelly. Personally, I love the texture.

 

Stir-Fry Mung Bean Noodles is common street food in Xi An. It is stir-fried in a big flat pan, with ginger, chilies, garlic and chopped spring onion with fermented bean paste for a quick and filling savoury snack/meal.
