Hot Noodles With Braised Sauce [关中卤汁热米皮]

Varieties of noodles found in Xi An.

 

This is the hot version. The same old rice noodles but now served in a braised sauce made from soysauce, fermented black bean, spices, garlic and of course, chilli oil.

 

The soy sauce and fermented black bean added more savouriness and a tinge of phenolic smokiness.
