Spicy & Tangy Soup [糊辣汤]

This is standard breakfast item in Xi An. Usually served with stuffed Mo(s).

 

The spicy and tangy soup (created using chillies, spices and vinegar) is cooked with vegetables, rice vermicelli, fungus, seaweed and beancurd skins, and of course, a meat version can also be served with the addition of meat balls.

 

Flour is added to thicken the soup to impart a slight gelantinous texture.
