Pita Bread Soaked in Lamb Soup [羊肉泡馍]

"Mo" is a type of pita-like bread popular in Xi An. The locals actually break the starchy bread into soybean size bits in a bowl. The bits were then sent into the kitchen where they are quickly cooked in a broth made from mutton or beef and then served with garlic and chopped cilantro.

 

This is a very popular local dish and could claimed its origin from the Sung Dynasty. It was claimed that the first Emperor of the Sung Dynasty was so poor while he was in Xi An that a businessman took pity of him and offered him lamb soup to go with the piece of bread he had.

 

When he founded the Dynasty, he wanted to taste the dish again and so had the imperial chefs recreate the dish.
