"Piang Piang" Noodles [梆梆面]

This is one of the signature dishes of the region around Xi An, called Han Zhong [汉中].

 

The noodles (made from wheat) are called "Waistband noodles" as they are very wide. The name of dish is so named because that is the sound of the noodles hitting the table when they are being made.

 

There are many different ways of serving the noodles but the taste is basically tangy (from vinegar) and mild spicy (from chillies and spices). In my version, the noodles were served with local chicken, potatoes, onions and celery, which reminded me of Mirepoix with a heavy sino-oriental twist.

 

The Chinese name listed above actually pronounces "Bang Bang" Noodles, which is incorrect. The rightful Chinese word is an antiquated word that the modern Chinese dictionary no longer uses.
