Saucy pancakes had been around for centuries. The secret of each saucy pancake lies in the saucy, which was used to coat the pancake.

 

In my version, the pancake was warm and springy - perfect texture - and the generous coating of the umami alliaceous sauce gave the otherwise dull pancake a great flavourful lift.
