Stir-Fried Mee Sua

Supper @ a very famous roadside stall offering Chinese wok-fried items.

 

Mee Sua is very thin noodles made from rice flour. It is usually served souped, with the noodles totally soggy. Mee Sua is usually served on birthdays to elders to symbolise longevity.

 

In this case, they were given a very exciting twist. Mee Sua are very delicate noodles and so the ability to coax them to cook well in a wok is a test of any chef's wok skills. Every other ingredient is actually secondary.

 

The Mee Sua here is to die for. The wok aroma. The flavourful noodles. Ahh...heaven!
