Kandar Papadam

Dinner @ Kayu Nasi Kandar, a very famous Nasi Kandar shop in Kuala Lumpur.

 

Nasi Kandar is an original meal from Penang and literally means "rice on the shoulder". It originated from the need to feed coolies working at the port of Penang. Rice peddlers will come to the coolies' workplace at the wharf on foot and they balanced a mangrove pole about seven feet long on one of his shoulders.

 

At each end of the pole, there was a large pot in a basket suspended from it containing plain white rice and on the other end, another pot filled with one curry dish such as meat curry or fish curry. The idea was a quick one dish plate with some meat or fish with gravy on a bed of rice. Today that has evolved to include varieties of curry and different types of food.

 

Papadam is a common appetiser in Indian food and naturally makes its appearance in a Nasi Kandar setting. It is a thin, crispy cracker made from flour, salt, oil and spices.
