小管面线 (Squid Angel Hair Noodles)

Squid is currently in season in the waters around the Penghu archipelago so squid is probably seen as a very local ingredient.
Almost every shop in Penghu has Squid Mee Sua (angel hair wheat noodles) on their menu but this place stood out for the freshness and tastiness of the dish. The shop also offered the gravy from marinated conches as a dip to further the taste.
I must admit, as it is very easy to overcook squid and turned it rubbery, these here were decadently tender. Firm to hold its shape but yet soft to be yielding to each bite.
The broth was light with a mild seafoody savouriness but moreishly umami so the angel hair noodles absorbed all the deliciousness. Each slurp was a delight!
