蛤蜊汤 (Clam Soup)

I decided to add a bowl of soup for my dinner, but I confessed I made a small mistake and instead of choosing oyster (牡蛎) soup, I ended up ordering clam soup (sheepish).

 

It seems ginger is commonly added to mask any offputting fishiness in Penghu and it was no exceptions in soups either with this bowl of soup, heavy in ginger flavours. The natural succinic taste of the clams were apparent though.....so the soup came across as lightly sweet and umami.
