酒酿鸡排 Fried Fermented Rice Wine Lees Chicken Cutlet

Fried chicken cutlet is a common street food in Taiwan, often seen in night markets.

But one flavoured with fermented rice wine lees is a novelty and one made famous by this chain.

The fermented rice wine lees imparted a lingering sweetness to the taste (but also a subtle bitterness).

Alas, the fried cutlet was prepared with flattened chicken breast meat and not with the tenderer chicken thigh meat; the latter would have been more enjoyable.
