金瓜米苔目 (Stir-Fried Mee Tai Mak With Pumpkin)

Pumpkin, Luffa, Peanuts, Sweet Potato and Corn are grown locally in Penghu so using pumpkin as an ingredient is commonplace.

I was also intrigued by the rice-based noodle of "Mee Tai Mak" here, as they resembled thick but shortened udon instead of the "rats tail" shape more commonly found in Southeast Asia. They were also more chewy to the bite.

 

Stir-fried with cabbage, prawns and squid as well, the noodles were pretty enjoyable because of the sweetness imparted by these ingredients.
