Black Pudding Eggs Benedict

Breakfast @ Mary Mount Hotel.

 

The special of the day on the hotel's breakfast menu.

I never had black pudding served as an Eggs Benedict so of course, I would try!

 

Instead of the usual spinach + protein, it was mushrooms + protein.

The mushrooms added much needed umami (since they are natural sources of glutamates and nucleotides) that really enhanced the enjoyment of the dish and the tangy Hollandaise sauce managed to contain both the earthiness contribution from both fungi and black pudding. And of course, this being in the UK....I love it most when Eggs Benedict get served on a toasted muffin bun!

 

It was an interesting and tasty spin on Eggs Benedict.
