Sticky Beef Brisket Croquettes

"Served with horseradish cream mayonnaise"
Something ordered for the junior at the table....but croquettes go well with both kids and adults (grin).
The crunchy breaded exterior was a perfect foil for the soft and mushy mashed potato interior.
The pulled beef brisket got a tad lost in the pillowy encasement but the brown-gooey sticky glaze was handsomely moreish.
