Monkey Shoulder Cranachan Cheesecake

"Raspberry sorbet"
Cranachan is a traditional Scottish dessert. Originally intended as a celebration of harvest, it is made following the raspberry harvest in June. The dessert consists of cream and fresh seasonal raspberries, bolstered by Scottish oats and whisky. Modern recipes usually are made from a mixture of double cream, whisky, honey and fresh raspberries, with toasted oatmeal soaked overnight in a little drop of whisky.
Strangely I must be looking for it at the wrong places as I am unable to find any place offering it while in Scotland! I eventually encountered it in England on the last night of my holidays...in a different form.
Technically, all the ingredients are present: raspberry (in the form of the sorbet), oats, cheesecake (replacing the cream) and while it was mentioned, I can't really find the (Monkey Shoulder) whisky! (Not sure where it disappeared into....maybe it's folded into the cheesecake?)
I am never a fan of cheesecake....but I must say the version here was more like a creamy mousse. I do like oats personally. However, the star of the dessert is that raspberry sorbet: So sharp, so fruity, so refreshing, so alive! It sang, it crowed, it effervesced! I could have just ordered scoops of it on its own.
