Slow Roasted Cumbrian Saddleback Pork Belly

Dinner @ "Bread Street Kitchen".

 

"Braeburn apple sauce"

 

While the crunchy pork crackling was absolutely divine...it was a tad over salted (for extra crunch I reckon) and so in my personal opinion, ruined this dish a tad even if the other parts of the pork belly turned out spot-on. Over-salting any dish kills the taste rather than improves it.

 

As the crackling was a tad salty...I looked towards the tangy apple sauce as well as the apple salad to provide more balance and in my opinion, the plate needed a little more of both (grin). The little explosions of sweetness done wonders and I was hoping for more of it.
