Traditional Dublin Coddle

Coddle is an Irish dish which is often made to use up leftovers, and most commonly consists of layers of roughly sliced sausages (pork sausages) and rashers (thinly sliced, somewhat-fatty back bacon) with chunky potatoes, sliced onion, salt, pepper, and herbs (parsley or chives). Coddle is particularly associated with the capital of Ireland, Dublin.

 

Imagine potatoes cooked to the point of disintegration. It was almost like mashed potato soup.

Add in bacon and sausages and I got a bowl of rustic Irish hospitality. It was almost like a warm hug.

A small bowl it was but packed so much with savoury flavours.

I can imagine how welcoming this dish must be in winter, enjoyed in front of a log fire.
