Corned Beef Dumplings

"Diced Slow-Cooked Corned Beef, Sauteed Cabbage and Kale with Parsley Sauce and Boxty Dumplings"
Boxty is a traditional Irish potato pancake. The most popular version of the dish is made with grated raw potato, cooked mashed potato, and flour, made into a batter with fresh milk and slow-cooked in a pan until golden brown.
Traditional alternatives include boiled and baked.
So, the boiled Boxty - ala Irish's "Gnocchi"?
I nurse not-so-fond memories of the dumplings from Eastern Europe - all heavily starchy and stodgy...so I came trying with no expectations.
Lo-&-behold....the dish turned up spectacularly tasty!
There was a "wok hei" je ne sais quai when it was served....it smelled good!
The colours looked vibrant and inviting as well; unlike the grey, brown and black of the Eastern European memories.
The dumplings felt yieldy and popped one went in for a canary-down-the-chute try.
Ooooo.....it tasted nice! Pillowy in texture coated in a light creamy umami outer coat.
The corned beef cubes lent a lot of savoury scrumptious-ness to the dish and the kale added freshness and crunch.
The plate was wiped clean by mate and myself.
I could lick the bowl if decorum was not a consideration (grin).
Yummy!
