Traditional Irish Lamb Stew

Dinner @ "Brannigan's".

 

"Tender Wicklow lamb with carrots, leeks, onions and rosemary. Slow cooked in a herb broth with creamy mash potatoes."

 

On my list to try and I think I tried a version that was positively reviewed.

And why shouldn't it be?

The stew (more like a soup) was hearty, flavourfully umami and utterly enjoyable.

You can't really go wrong with a broth sweetened and flavoured with carrots, leeks and onions. (Just missing the celery to make it a Mirepoix)

I did expect the lamb to be tough but surprisingly, they were tender and soft....and I can immediately understand why this Lamb Stew gets the thumbs up online.
