Scrambled Eggs With White Bait [银鱼炒蛋]

Lunch @ 建新舫 in 巴城 (Ba Cheng), 阳澄湖 (Yang Cheng Lake).

 

A simple dish - scrambled eggs with nearby Lake Tai's [泰湖] famous export - the White Bait [银鱼].

 

Both items make a perfect pairing. The fishiness and fattiness of the White Bait accentuates the fullness of the eggs while the eggs rounded off any unpleasant marine character from the fish.
