Salmon Rice Bowl

Lunch @ "Main Street Commissary".

 

"Pan fried salmon in special sauce, served with pico de gallo, kimchi, purple cabbage and onsen egg"

 

Rice bowls have become one of the essential dish for any bistro/cafe in Singapore these days, building upon the idea of Japanese Dons, but fusing it with local touches at times.

 

Not sure where the special sauce went to....was it that yellow dollop in the photo? Whatever it was, it was too little to be significant perhaps....?

The pan-fried salmon was a tad on the over-done dried side unfortunately and I didn't quite enjoy pairing pan-fried salmon with kimchi - this combo seems to draw out the earthiness of these ingredients - instead preferring perhaps pickled radishes or pickled ginger to keep to the Japanese theme instead for some brightness....or deviating, maybe even some western-style pickled gherkins? Local Achar would work too I reckon.
