Pyrenees Milk-Fed Lamb

"Hummus, Manchego Tile, Fried Piparras"

 

This lamb dish was EXQUISITE!

So tender, so juicy and utterly delicious!

Folks who are apprehensive about tasting lamb should hold no fear here: There was hardly any animalic trace - it was just all sweet, umami and succulently meaty.

 

I thought the fried (pickled) green Piparras chillies was a fine touch - that little tangy heat provided counterbalance to the meatiness of the lamb. The silky hummus added a mild earthy creaminess while the Manchego "Tile" or "Tuille", provided a textural lift of umami crunch.

 

Utterly enjoyable!
