Duck Soba

Soba is a specialty of Matsumoto.
Alpine waters are always good for making really al dente soba noodles.
Kobayashi soba is a soba institution in the city - with patrons purportedly from the Japanese Imperial household.
I decided to try the quirkier duck soba on the menu - consumed by dunking cold soba into a warm dipping sauce that reminded me of a very lightly Chinese-style braised duck......with a very faint hint of five-spice (which can be accentuated by the spicy mix on offer, which hinted of clove). More domineering in the sauce however, were the sweet-alliaceous leeks, the savoury soysauce and the faint allure of fatty duck.
I enjoyed the dish aplenty!
