Conger Soba

The Anago (sea eel) is not as popular as the Unagi (freshwater eel) in Japan but nonethless, here, served with soba, the "white" char-grilled sea eel imparted a beautifully synchronised sweet-umami symphony that brought the flavour of the soba to vivid life.
I especially found delight with the slightly singed edges of the eels - that momentary crunchiness added sensation surprise and textural joy.
