Braised Elk Roast

"cauliflower cream, parsnip, carrot, blackcurrant sauce"
The entire dish strangely reminded me of Angelica Root braised beef....there was a mild medicinal earthiness to the aroma and taste, which I think probably was due to the roasted parsnips and carrots on the plate, as well as the cauliflower puree.
The elk itself was tender and melting....and I love that blackcurrant sauce that was crucial to pierce through all that juicy meatiness with its sweet tangy sharpness......without it, the dish may have been too heavy.
Interesting first try for elk!
