Dish 2 : Radish

The tasting menu of "Restaurant 108", 2 Michelin-stars (Dinner).

 

"with salted green strawberries"

 

A radish rose sitting pretty in a emerald pond.

 

And below the surface, little chunks of salty pickled green strawberries from last year, demurred the server.

 

Oh, they were that old huh, I joked back....and we shared a smile.

 

The radish itself is very clean tasting - refreshing, crunchy, sweet and comes with a mild bite.

 

On its own, it would have been dead boring, as pretty as it looked.

 

The salted strawberries, while extremely salty on their own, brought life out of the radish, infusing it with boldness, as the salinity seemed to conjure it to blossom, rendering it sweeter to the taste.

 

Baptised by the greenish herbaceous and mildly medicinal broth (I thought I detect a hint of basil)....brewed from fennel and a few other ingredients (I just couldn't extract them out from my memory) I have since lost.....the radish was gently awashed with a luscious coat of flavours...like Geppetto's Pinocchio, it sprang to (delicious) life!
