Slow-Cooked Beef Neck

Lunch @ "Kafeteria", inside Statens Museum for Kunst.

 

"slow-cooked beef neck, baked lemon, greens"

 

Despite being "slow-cooked"....the slices of beef neck were still slightly on the chewy side.....it needed slightly more "slow-cooking" (grin)

 

But the sear was good to deliver some exterior crunch, and the slight oiliness of the slices was partially muted down by the greens (wide juliennes of cucumber) and charred leeks, flavoured with dill.
