Dish 4: Oyster Emulsion Angel Hair Rosti Kale

Dinner @ "RAW", Michelin Taipei 1 Star and Top 50 Restaurants Asia 2018 No.15.

 

This likes a edible version of Taiwan itself, with the green lush over yellow soil.

 

Green lush: Fishy green tea powder dusted over deep-fried kale.

 

Yellow soil: Angel-hair pasta deep-fried in sesame oil (an interpretation of the popular sesame oil mee sua).

 

As everything was deep-fried, I find the balance heavily tipping to one side - all too crunchy = all too oily.

 

Sounds like a great idea but I am not quite a fan.
