Dish 7: "Dirty Chicken" Umami Ketchup Black Radish

Dinner @ "RAW", Michelin Taipei 1 Star and Top 50 Restaurants Asia 2018 No.15.

 

"Dirty" is the "IN" culinary word and I am not referring to anything with innuendos. Suddenly, it is hip to get your lips (and/or hands) darkened or even smeared by edible "dirt". Exactly what your mum told you NOT to do when you were young. (grin)

 

Taiwanese Black Chicken is the star of the romp. A piece of juicy tender pillowy chicken breast (wow) and a piece of decadent moist and silken chicken thigh (WOW), all glistening like black diamonds, rested under a foliage of lichen-like greens, accompanied by thin slivers of earthy but yet sharp tasting radishes, surrounded by riverlets of brackish umami......dark and dirty had never tasted so good.
