Nure-Senbei

The subject of much debate among the siblings - "Senbei" or Japanese crackers, are usually crunchy. This version, bought by mum on a recent trip to Tokyo, is soft! My brother insisted it was either a bad product and that we had been conned.

 

Truthfully, I had no idea what mum bought, as she was grabbing packets. But a quick check online, and later affirmed by my Japanese colleagues, that this was Nure-Senbei, an unique type of Senbei, that is in fact, soft!

Nure-senbei is a type of rice cracker from Chiba prefecture, near Tokyo. This rice cracker gets its name, meaning “wet”, from the fact that it is dipped in soy sauce during cooking so that it becomes moist and chewy all the way to the center of the cracker. It’s a local specialty of the city of Chosi, which specializes in soy sauce production.

 

I didn't mind that it wasn't crunchy. I actually liked and enjoyed the fact that it is soft and chewy and it came packed with a punchy soysauce salinity and umami. The sharp umami it delivered was a pleasant jolt to the palette.
