MUME Salad
Dinner @ "MUME" (Michelin Taipei 1-Star 2018).
"20+ types seasonal vegetable, fermented black beans"
Well....it is a salad but an exceedingly beautiful one to behold.
An orangy nasturtium flower sat at the apex of the salad mount when it was served, as if it was trying to seduce the customer to go and eat it. Sprinkled amidst the nest of greens were little blooms of violets.
The unique ingredient had to be the deep-fried areca nut flowers - the server mentioned that they impart a taste similar to deep-fried bamboo. Truthfully, not quite deep-fried bamboo.....but they certainly had a savoury aroma, not quite unlike mushrooms...and a light umami taste.
