Dish 2: Watermelon Kampachi Pink Guava

Dinner @ "RAW", Michelin Taipei 1 Star and Top 50 Restaurants Asia 2018 No.15.

 

POW! WOW! SLAM! PONK! KA-BOOM!

 

Sweet! Sour! Salty! Umami!

 

All 5 senses woke up.

OMG - this was so GOOD!

 

I am not a raw fish fan but that "rose" of pink guava and kampachi slices kept under a lid of pickled watermelon hit my tastebuds and exploded with the strength of an atomic bomb. My senses blew wide apart with excitement!

 

Hallelujah! What a symphony of joyous flavours!

 

Pickled watermelon, raw fish and pink guava....who knew!

 

And I was also introduced to a brand new type of watermelon.....the smallest one I had ever encountered. It is in fact a Sanditta. It looked like an oversized pea. I thought it a green tomato. My server slyly taunted me to try it - and I was gobsmacked. It was like a "black hole" of pickled watermelon flavours. Such intensity!

 

This was the DISH of the evening for myself.
